Understanding GI: Glycemic Index (GI) is the ranking of carbohydrates. It’s the value obtained by the measurement carried out on carbohydrate-containing foods & their impact on blood sugar. Scale from 0 -100, which can be broken down into 3 categories – High (70-100), Medium (56-69) and Low (0-55), based on how quickly they raise sugar levels after eating* Carbohydrates from high-GI foods are rapidly digested, absorbed, and converted to glucose.
